I'm really excited to go in March. I'll be staying in the South West first and then the North. Can anyone suggest some authentic and less touristy restaurants, as well as a cooking class to learn how to cook Creole cuisine? Additionally, I'm wondering if it's easy to find gluten and dairy-free food, as I have sensitivities but not allergies.

Go off piste for local cuisine. Get to know a local for cooking lessons.
