This is not simply our job, it’s our passion.About the RoleThe Sous Chef de Cuisine, Breakfast will be respoonsible for the daily operation of the breakfast buffet in La Terrasse and the daily MEP. He/She will execute duties thoroughly, producing quality outputs with attention to details. The Sous Chef de Cuisine, Breakfast will adopt the Mission & Vision of the company.Key Duties and Responsibilities
- He/She will supervise the cleaning of all sections and surfaces before as well as after each service or MEP.
- To monitor cold room and cooking temperature.
- To receive goods and to check the quality of all received goods (from dry store, deep freeze, and vegetables-FIFO).
- To communicate clearly, frequently and in a timely manner.
- To share information with subordinates on a daily line-up.
- To always be on time schedule, ensuring the buffet is set up; and to respond to supervise all kitchen MEP.
- To immediately report any incident to the Chef to take necessary action.
- To do daily walkthrough in the kitchen to check equipment, ensuring they are in good condition.
- To provide assistance to subordinates, when needed.
- To check staff planning daily.
- To hand over all keys and MEP after use.
- To help the Chef in controlling food cost and to initiate training.
- To have a critic eye on everything.
- To maintain a good hygiene in the kitchen, keeping it always clean.
- To be firmly involved in achieving budgeted food cost and in reducing wastage to make profit.
- To check daily reservation and to do order as well as MEP according to the occupancy and reservation.
- To have a Training Plan for the Chefs to be polyvalent.
- To ensure that the buffet is set up on time with the Chefs waiting for the guests.
- To ensure consistency on all food served during breakfast.
- To always seek for innovative ideas.
- To be responsible for maintaning all materials and equipment, ensuring they are always in good condition.
About YouThe desired qualification for this role is at least a Diploma in Culinary Arts. The ideal candidate should have at least 2 years of experience in the same role in an International Ultra-Luxury Resort and must be fluent in written and spoken English and French.Position open for locals onlyOur brand is expanding faster than ever before.
